Light adds up instead of absorbing, so brown and gray light make a gray (#B39A90). That is why screens can show bright yellows from red and green light, while the same paints would turn brown.
Change the ratio. Three parts brown to one part gray gives a brown (#835B3A), while one part brown to three parts gray gives a brown (#897B65). To lighten the result add white, and to darken it add a little black.
Use color-mix(in oklch, #7B4A2A 50%, #8A8A8A 50%), which gives #846A5B. OKLCH keeps the middle of the mix bright, while mixing in sRGB tends to turn it gray.
